Pumpkin Protein Ball Recipe

We’re deep into pumpkin season because let’s face it, the pumpkin recipes were pulled out of cook books and desk drawers in early September — and even late August if you’re truly pumpkin spice obsessed.

If you’re not yet sick of the flavor of pumpkin, this recipe is protein-packed and tasty. Not only that, but it’s also healthy. According to the Cleveland Clinic, the health benefits of pumpkin include the following.

  • Pumpkin is good for your eyes as it contains “lutein and zeaxanthin, compounds that protect your eyes from age-related macular degeneration and cataracts.”

  • Pumpkin is high in potassium, which is great for your heart health.

  • Pumpkin is also high in vitamin C, which is important for your immune system.

  • Pumpkin contains cancer-fighting carotenoids.

  • Pumpkin is filling and will assist in maintaining fullness after you eat.

  • Pumpkin seeds reduce the risk of cancer, improve bowel health and more.

Ingredients for pumpkin protein balls

  • 2 cups of oats

  • 2 scoops of vanilla protein powder

  • 1 tbsp of pumpkin pie spice

  • 1 tbsp of cinnamon

  • 1/2 cup of nut butter

  • 3/4 cup of honey

  • 1/4 cup of pumpkin purée

Recipe for pumpkin protein balls

Combine all dry ingredients including oats, protein powder, pumpkin pie spice and cinnamon. Stir in the wet ingredients including nut butter, honey and pumpkin puree. Roll the mixture into 1-1.5 inch balls and enjoy in moderation.
