High in Protein Breakfast Casserole Recipe

Ingredients for breakfast casserole

  • 2 pounds of petite golden potatoes

  • 2 bell peppers

  • 1 white onion

  • 15 chicken sausages

  • 200g of egg whites

  • 1 cup of shredded cheese

  • Olive oil

Recipe for breakfast casserole

Begin by dicing the potatoes. Season them with salt and pepper to taste. Air fry the potatoes at 400° for 20-25 minutes. In the meantime, slice the peppers and onions and sauté them over a stovetop on medium heat with one tablespoon of olive oil. Cut the chicken sausage into pieces and cook in pan on the stovetop over medium heat. Scramble the egg whites.

In a 9x13 baking dish, combine and layer the ingredients and top with shredded cheese. Bake at 400° for 10-12 minutes. This dish will make about eight servings.

Calories/macros per serving: 250 calories total, 28 grams of carbohydrates, 16 grams of protein, 6 grams of fat.
